Podcast submitted, approval email received, but when I click on the link provided a popup tells me "The item you requested is not currently available in the Australian store"
I just logged into iTunes connect and my podcast feed is 'Active', not 'Hidden'
Should I just wait, or is there another action I can take?

In general that message means it's not available anywhere. Certainly searching on 'Astrophiz' doesn't produce any results in the UK,though this isn't conclusive as the Search is often slow to activate; obviously I can't check further without the URL of your Store page as given in the acceptance email.
If you've only just received the email it's quite possible it hasn't made it into the Store yet. I don't know what the usual delay is but you should probably give it a couple of days.

What I assume is your podcast is now available in the UK at
https://itunes.apple.com/podcast/astrophiz-podcasts/id1132925969
so I would expect it to be also available in Australia.
